How to make it

  1. 01

Drop the mint leaves and lime wedges into a tall glass. Muddle gently — bruise the mint, don't shred it.

  2. 02

Add the Mango Sharbat and the rum if using. Stir.

  3. 03

Fill with crushed ice to the top.

  4. 04

Top with cold soda water. Stir once, briefly.

  5. 05

Garnish with a mint sprig and a lime wedge. Serve immediately.

The story

Most mango mojitos are pulp + syrup + soda. This one starts with the sharbat already done — slow-pressed Alphonso and Kesar — so the drink is built around real fruit, not flavour.

The mint takes a proper muddle, not a slap. The lime is wedges, not juice. And the rum, if you go there, should be light enough to disappear behind the mango.
