Coconut Water Granita

How to make it

    If using palm sugar, dissolve it into the coconut water by gently warming and stirring. Cool to room temperature.

    Stir in the lime juice. Pour into a wide shallow tray and freeze.

    After 1 hour, scrape with a fork to break up the ice crystals. Repeat every 30 minutes until you have a fluffy frozen snow — about 4 hours total.

    Spoon into chilled bowls. Top with lime zest and a few mint leaves.

The story

A granita is the laziest frozen dessert there is. You freeze a liquid, scrape it with a fork every half hour for a few hours, and you have something that looks elaborate and tastes like exactly the thing you started with.
